Renowned for its seafood and culinary delights, Prince Edward Island is home of internationally-recognized Culinary Institute of Canada. Located in Holland College's Tourism and Culinary Centre on the Charlottetown waterfront, The Culinary Institute of Canada has been training aspiring chefs since 1983 and is regarded by many as the premiere culinary school in the country. Students are drawn from around the world to the institute, where they have the opportunity to enjoy the unique cultural experience of Prince Edward Island and Atlantic Canada while at the same time developing the necessary skills to launch a successful culinary career. Now you too can get a taste of what our students experience with a variety of themed culinary boot camps.

FULL DAY CAMPS (9 a.m. - 4 p.m.)

Local Flavours - $249 (includes transportation to and from the market, taxes extra)

This brand new boot camp offers participants an opportunity to learn more about the wonderful flavours of Prince Edward Island. With inspiration from here and abroad, the chef will take you on a delicious culinary journey. PEI’s local bounty- Shellfish, Beef, Pork, Potatoes, will be the focal points of this class. Local products will be used in creating the flavourful recipes that each participant will go home with upon the completion of the class. Pastas, breads, salads, fish and meat are just a few of the dishes we will put together throughout the day. Trips to the market will allow the participant pick out a few ingredients for their own “ local inspiration” -a true farm-to-table experience.

Thrills on the Grill - $199 full day (taxes extra)

Fire up the grill! Ever since man discovered fire, we've had a love affair with grilling, and no one has perfected this culinary tradition like The Culinary Institute of Canada. Our chefs bring their culinary skills to the grill, taking students on a taste journey around the island with exciting, flavourful recipes for all to enjoy.

Seafood 101 - $199 full day (taxes extra)

Seafood lovers ahoy! The Culinary Institute of Canada is preparing a one of a kind boot camp experience that features a treasure trove of morsels from the deep, as well as an education in seafood. Delivered by master class chefs, Seafood 101 gives you an experience that will last for a lifetime. Showcasing our Islands bounty of Island Blue Mussels, Lobster, Oysters and Clams.

Seasonal Desserts - $199 full day (taxes extra)

Forget the main course; what's for dessert? How about Local Plum Tart Tatin with Garden Thyme and Goat Cheese Ice Cream! Impress your family and friends by learning how to bake exquisite pastries, cakes and desserts. Enjoy a number of our finest culinary creations using fresh local seasonal fruit: strawberries, raspberries and blueberries, apples, plums.

Lobster 101 - $269 (taxes extra)

Looking for the low-down on PEI's most delicious crustacean? Our chef will take you from the trap to the table - and then some! You'll take a trip out on a lobster boat to check the traps, see them hauled in, and get a glimpse into a day in the life of some of the Island's hardest working fishermen. Then we head back to the kitchen to show you a few delicious ways these Island delicacies can be served!

Sports Nutrition 101

Energy is what propels us. Its existence is the greatest factor responsible for strength, endurance, stamina, growth, recovery and state of mind. In this camp, you will learn about the science behind nutritionally sound meals as well as creating great tasting dishes that you and your "Home Team" will love and benefit from. Certified by a registered Dietician and created by Chefs, Sports Nutrition 101 will give you the edge you need to win!

HALF DAY CAMPS

Chocolate and Wine - $129 half day (taxes extra)

Time: 12:30 p.m. - 4 p.m.

Explore pairings of your favourite indulgences - wine and chocolate. This boot camp features a decadent chocolate selection, from classic flavours to unexpected surprises, matched to a premium VQA wine. Pair the right wine with the right chocolate, and you'll experience a match made in heaven!

Healthy Eating 101 - $129 half day (taxes extra)

Time: 9:00 a.m. - 1:00 p.m.

Looking to learn how to cook healthy alternatives? Healthy Eating 101 will teach you how to prepare healthy and delicious meals. Learn how easy it is to incorporate healthy foods into delicious and well-balanced meals, as well as how to prepare everything quickly and easily.

Kids "R" Kookin' 1 - 4 day camps (ages 7-17) - $299 +gst

If your kids always want to help out in the kitchen, or if you'd like to get your youngster excited about food, do we have a four-day camp for you! Kids 'R' Kookin' takes the concept of summer camp to a whole new level. The Culinary Institute of Canada offers kids aged seven to 17 the opportunity to learn how to cook from the very best. Our camps feature action packed days in the kitchen, where they learn all about culinary arts through demonstrations and hands-on experience.

Kids "R" Kookin' 2 - 4 day camps (ages 12-17) - $299 +gst

An advanced class for those seasoned kids in the kitchen! We take things to a whole new level. For kids 12-17, we will explore some local flavours and refine their kitchen skills. We prepare items for Brunch, Desserts and Appetizers. We will also spend a day on a farm, finding out where their food comes from! And do a little growing of their own! Our camp features action packed days in the kitchen, where they learn all about culinary arts through demonstrations and hands-on experience.

Foodie Tours on the Road are customized itineraries designed specifically for the savvy travelers who want to fully immerse themselves into the culture and history of Prince Edward Island. These unique culinary tours are led by expert chefs, who take us into both oyster and mussel operations as well as local blueberry processing plants. As we sample the local cuisine and interact with our hosts, these culinary tours are a once in a life time chance to discover and try out authentic island recipes and learn local food preparation methods. Although the main emphasis is on food, these itineraries also include comprehensive sightseeing and interaction with locals who share your passion for good food.

PEI Mussels

From the sock to the pot we take you through the entire journey of P.E.I.'s most famous mollusk. Join our chef as we take a full tour of one of P.E.I.'s mussel operations. Then we'll head to the beach to taste them first hand!

Come on a tour of a field and the processing plant, and then we'll head to back to the kitchen to show you unique local recipes that will impress even the toughest critics! PEI Oysters

Raspberry Points, Colville Bays, Pickle Points and Lucky Limes are just a few of the many island oysters we will shuck and slurp as we make our way across P.E.I. sampling some of the world-famous Malpeque oysters. Learn where these Island gems come from and see what makes them taste undeniably great. As always, our chefs have used their own culinary flare to create some amazing oyster recipes.
