The Culinary Institute of Canada (CIC) was established in 1983 and is regarded by many as Canada’s premiere culinary school. Annually, approximately 250 students are drawn to The CIC from across Canada and around the world, for training in Culinary Arts, Pastry Arts, and International Hospitality Management. In 2009, The CIC broadened its scope through the establishment of Canada’s Smartest Kitchen, a food product development and commercialization centre of excellence fostering collaborative work between chefs, scientists, and industry.
A renovation and expansion to the learning environment at The CIC has become a critical priority to meet the changing needs of a growing, dynamic culinary industry in Canada and around the world. We have an exciting vision that encompasses a revitalization of approximately 8,500 sq. ft., and an expansion to incorporate a state-of-the art butchery, a cold cuisine production kitchen, and more than $1.8 million in new and emerging technologies and equipment. Our dining room and our cafeteria will see a complete redesign, better replicating the service designs of modern food service operations. An in-house growing program will also be incorporated, and needs in the area of greening and sustainability through enhancements to mechanical, lighting, building envelope and safety systems will be addressed. In addition, a new slate of entrance awards for students pursuing their passion at The Culinary Institute of Canada will also be established through a $500,000 investment in student financial aid.
A $7.5 million initiative in all, we hope you will join us as we work to enrich the experience for our students, evolving our facility, our culture, and our environment to emulate the origins and foundations of food production from the farm gate, through the kitchen, and onto the table.
